Grilling ribeye steaks is easy.

Recipe - Steak Rub

My recipe is a simple rub - reserve extra virgin olive oil, fresh-cracked black peppercorn, and Alessi fine sea salt. That’s all I want on my steak. Rub it on about an hour before grilling, and let it soak in while the steak comes to room temperature. The salt will soak into the meat and help breakdown the proteins to soften even more. The oil will help sear the outside for a nice finish.

On occassion I’ll cut some garlic and rub the meat with it, elephant garlic works well for this - it’s not as intense as regular garlic, it’s bigger (easier to rub), and it’s just a bit sweeter. Sometimes I’ll also take a little real butter melted on top, but I like to taste the steak, not anything else.

I generally get good ribeyes for grilling from HEB - they’r just about the best steak I slap on my pit I got just over a pound for about about $13. Sometimes I can find a kobe or akashi or wagyu steak at Whole Foods or Central Market, but HEB is close and their better quality ribeyes are really tasty.

How to Grill Rib Eye Steaks

Saturday was grillin’ time, so I fired up the BBQ pit - plain old lump charcoal. I like mesquite charcoal for my hamburgers, but it doesn’t help a steak taste better - so I stoke lump charcoal in a charcoal chimney to get it going, then dump the coals into the grill. Using old school fancy lump wood charcoal instead of standard briquets makes any difference - the coals seem hotter and stay hot longer.

I don’t like to waste a chance to cook - and the steaks are done in just a few minutes - so I planned ahead and added a few chicken breasts to have later in the week.

I like the coals extra hot, helps me get done quick so I could get to the chicken. I only did about 4-5 minutes on each side. Was still rare to medium rare on the inside, just how I like it. If I had an adjustable rack, I would have moved it up just a bit and cooked a minute longer. At least I’m getting better at grilling steaks. I also picked up a few few buffalo sirloin steaks to grill next week. Yummy!

Smoked some corn and yellow squash for sides. Finished it off with a root beer float for dessert.

[…] It might be a nice place to take 20 out-of-town guests who’ve never been to Texas to celebrate a birthday or something, but it’s hardly romantic for 2, and not really suitable even for a family of 4 - unless you’ve got 2 crying babies and you want the ambient noise to drown them out and not draw attention to you.
